Quick cooking notes

  • Core ingredients include unsalted butter, milk, water, salt.
  • Follow all 12 steps in order for the intended texture and doneness.
  • Ingredient quantities listed below are for 8 servings.

Ingredients

  • 1 cup unsalted butter (cold and cubed)
  • 1 cup milk (warm)
  • 1 cup water (warm)
  • 1 tbsp salt
  • 2 tbsp active dry yeast
  • 1 large egg (beaten for egg wash)
  • 2 tbsp granulated sugar
  • 4 cups all-purpose flour

Instructions

  1. In a small bowl, combine warm water, warm milk, sugar, and yeast, then let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the flour and salt, then add the yeast mixture and mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth, then shape it into a ball.
  4. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  5. Roll out the chilled dough into a rectangle, then place the cold cubed butter in the center and fold the dough over to encase the butter.
  6. Roll the dough out again into a larger rectangle and fold it into thirds, then refrigerate for another 30 minutes.
  7. Repeat the rolling and folding process two more times, chilling the dough between each fold.
  8. After the final fold, roll the dough out into a large rectangle and cut it into triangles.
  9. Roll each triangle from the base to the tip to form the croissant shape and place them on a baking sheet.
  10. Cover the croissants and let them rise in a warm place for about 1 hour until doubled in size.
  11. Preheat the oven to 400°F (200°C) and brush the croissants with the beaten egg.
  12. Bake for 15-20 minutes or until golden brown and flaky.
