French Rolled Crêpes with Lemon Sugar

These tender french-style rolled crêpes are lightly sweetened, scented with vanilla, and finished with a bright lemon-sugar filling. They make an elegant breakfast or dessert with crisp edges, soft centers, and a simple café-style presentation.

Instructions
- Whisk the all-purpose flour, 2 tbsp of the granulated sugar, and fine salt together in a large mixing bowl for 30 seconds, breaking up any visible flour lumps.
- Whisk the large eggs in a separate medium bowl for 30 seconds, then add the whole milk, water, 2 tbsp melted unsalted butter, and vanilla extract and whisk until the mixture looks smooth and evenly combined.
- Pour the wet mixture into the flour mixture in a slow stream while whisking constantly for 1-2 minutes, until the batter is thin and mostly smooth with only tiny lumps remaining.
- Strain the batter through a fine-mesh sieve into a clean bowl or large measuring cup, then let it rest at room temperature for 10 minutes so the flour hydrates and the crêpes cook tender rather than rubbery.
- While the batter rests, stir the remaining 2 tbsp granulated sugar with the lemon zest in a small bowl, rubbing the zest into the sugar with your fingertips for about 1 minute until fragrant and slightly damp.
