It is thick, warmly spiced and slightly sweet from the beans. Serve it hot or cold with pap, braai meat, sausages, stews, bread or rice, and expect it to taste even better the next day. Ingredients
- 3 medium carrots (grated)
- 2 tbsp curry powder
- 3 tbsp vegetable oil
- 1 medium red bell pepper (chopped)
- 2 medium onions (chopped)
- 1 tbsp fresh ginger (grated)
- 3 garlic cloves (minced)
- 0.5 tsp black pepper
- 1 can baked beans in tomato sauce (about 400g)
- 1 tsp salt (or to taste)
- 2 tsp paprika
- 1 medium green bell pepper (chopped)
- 2 cups chopped tomatoes (canned or fresh)
- 1 tsp chilli flakes or chopped chilli (or to taste)
Instructions
- Chop the onions and both bell peppers, grate the carrots, mince the garlic cloves and grate the fresh ginger.
- Heat the vegetable oil in a large pot over medium heat. Add the onions and cook for 6 to 8 minutes, stirring now and then, until soft and lightly golden.
- Add the garlic cloves, fresh ginger, curry powder, paprika and the chilli flakes or chopped chilli. Stir for 1 to 2 minutes until the spices smell toasted, without letting them burn.
- Add the green bell pepper, red bell pepper and carrots. Cook for 5 to 7 minutes, stirring occasionally, until the peppers start to soften.
- Stir in the chopped tomatoes (canned or fresh) and simmer uncovered for 10 minutes, stirring from time to time, until the sauce has thickened.
- Add the baked beans in tomato sauce, the salt and the black pepper. Simmer for another 5 to 10 minutes until hot through and thick, then taste and adjust the seasoning.
- Serve warm, or cool and chill it to serve cold with pap, braai meat, bread or rice.
