  • Ingredient quantities listed below are for 6 servings.

Ingredients

  • 1 cup water
  • 1 tbsp vanilla extract
  • 1 cup evaporated milk
  • 1 cup sweetened condensed milk
  • 1 cup granulated sugar
  • 3 whole ancho chiles (deseeded and soaked)
  • 4 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a blender, combine the soaked ancho chiles, sweetened condensed milk, evaporated milk, eggs, and vanilla extract, and blend until smooth.
  3. In a saucepan over medium heat, combine the granulated sugar and water to make a caramel sauce, stirring until the sugar dissolves and turns a golden brown color.
  4. Quickly pour the caramel into a round baking dish, tilting to coat the bottom evenly.
  5. Pour the flan mixture over the caramel in the baking dish.
  6. Place the baking dish in a larger baking pan and fill the outer pan with hot water until it reaches halfway up the sides of the flan dish.
  7. Bake in the preheated oven for about 50 minutes or until the flan is set and a knife inserted comes out clean.
  8. Remove from the oven and let it cool at room temperature before refrigerating for at least 4 hours.
  9. To serve, run a knife around the edges of the flan and invert onto a serving plate.
