Roasted Beetroot Hummus

Ingredients
- 3 tbsp tahini
- 2 tbsp lemon juice
- 2 cups beets (roasted and peeled)
- 1 clove garlic (minced)
- 1 tsp cumin
- 1 tsp salt
- 2 tbsp olive oil
- 1 cup cooked chickpeas
- 2 tbsp water
Instructions
- Preheat the oven to 400°F (200°C).
- Wrap the beets in aluminum foil and roast them in the oven for about 45 minutes, or until tender.
- Once the beets are cool enough to handle, peel them and cut them into chunks.
- In a food processor, combine the roasted beets, cooked chickpeas, tahini, lemon juice, minced garlic, olive oil, salt, water, and cumin.
- Blend until smooth, adding more water if necessary to achieve the desired consistency.
- Taste and adjust seasoning if needed before serving.
