Instructions
- Place the 2 lb trimmed boneless skinless chicken thighs on a rimmed baking sheet, pat them dry with paper towels, and keep the raw chicken separate from ready-to-eat foods while you prepare the marinade.
- In a large nonreactive bowl, whisk together the 3 tbsp extra-virgin olive oil, 2 tbsp freshly squeezed lemon juice, 1 tsp finely grated lemon zest, 4 minced garlic cloves, 2 tbsp finely chopped fresh parsley, 1 tbsp finely chopped fresh rosemary, 1 tbsp chopped fresh thyme leaves, 1 tbsp Dijon mustard, 1.25 tsp kosher salt, 0.5 tsp freshly ground black pepper, and 0.25 tsp red pepper flakes for about 30 seconds, until the marinade looks glossy and evenly combined.
- Add the chicken thighs to the bowl and turn them with tongs for 1-2 minutes, making sure every surface is coated with the herb marinade.

- Transfer the grilled chicken thighs to a clean platter, tent loosely with foil, and rest for 5 minutes so the juices redistribute and the internal temperature remains safely at or above 165°F (74°C).
