Quick cooking notes

  • Follow all 9 steps in order for the intended texture and doneness.
  • Ingredient quantities listed below are for 4 servings.

Ingredients

  • 1.5 lb red snapper fillets (about 1-inch thick)
  • 2 tbsp olive oil
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 can canned diced tomatoes (14 to 15 oz)
  • 0.5 cup black olives (pitted and sliced)
  • 2 tbsp capers (drained)
  • 2 tbsp fresh lemon juice
  • 0.25 cup fresh parsley (chopped)
  • 0.25 tsp crushed red pepper flakes
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat the olive oil in a medium skillet over medium heat, then sauté the onion until tender, about 5 minutes.
  3. Add the garlic and cook for 1 minute, stirring constantly.
  4. Stir in the tomatoes, capers, olives, red pepper flakes, and parsley, then bring the sauce to a gentle boil.
  5. Reduce the heat and simmer the sauce for 10 minutes.
  6. Spread about 1/2 cup of the sauce in the bottom of an 11 x 7-inch baking dish and arrange the snapper fillets in a single layer over it.
  7. Drizzle the lemon juice over the fillets, season lightly with salt and black pepper, and spoon the remaining sauce on top.
  8. Bake for 15 to 20 minutes for thinner fillets, or up to 30 minutes for thicker fillets, basting once during baking.
  9. Remove from the oven when the fish flakes easily with a fork, then serve immediately.
