Quick cooking notes
- Core ingredients include cardamom pods, water, saffron strands, sugar.
- Follow all 10 steps in order for the intended texture and doneness.
- Ingredient quantities listed below are for 6 servings.
Ingredients
- 5 whole cardamom pods (crushed)
- 4 cups water
- 1 pinch saffron strands
- 1 cups sugar (granulated)
- 1 liters milk (whole)
- 3 tbsp lemon juice (freshly squeezed)
- 2 tbsp pistachios (chopped)
- 2 tbsp almonds (chopped)
Instructions
- In a large pot, bring the milk to a boil over medium heat, stirring occasionally to prevent it from scorching.
- Once the milk boils, add the lemon juice gradually while stirring gently until the milk curdles and separates into curds and whey.
- Remove the pot from heat and strain the curds using a muslin cloth or fine sieve, rinsing with cold water to remove the lemon flavor.
- Squeeze out excess water and let the curds sit for about 30 minutes to firm up, then knead them into a smooth dough.
- Shape the kneaded curds into small, flat discs and set aside.
- In another pot, combine water, sugar, and crushed cardamom pods, and bring to a boil to create a sugar syrup.
- Once the syrup is boiling, gently add the paneer discs and cook for about 10-15 minutes until they double in size.
- In a separate bowl, mix the remaining milk with saffron and simmer for 5 minutes to infuse the flavor.
- Remove the paneer discs from the syrup and place them in the saffron milk, allowing them to soak for at least 30 minutes.
- Garnish the Ras Malai with chopped pistachios and almonds before serving.
