  • 1 cups pumpkin puree

  • 1 cups rolled oats
  • 0.75 cups brown sugar
  • 0.25 tsp salt
  • 0.5 tsp nutmeg
  • 1 large eggs
  • 0.5 cups butter (softened)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract, then mix in the pumpkin puree until well combined.
  4. In another bowl, whisk together the flour, rolled oats, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the raisins until evenly distributed throughout the dough.
  7. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden.
  9. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
