Instructions

- Add 0.5 cup melted unsalted butter, 1 cup granulated sugar, and 0.25 cup packed light brown sugar to a large mixing bowl, then whisk vigorously by hand for 1 minute until the mixture looks glossy and slightly thickened.
- Add 2 large eggs, 1.5 tsp vanilla extract, and 1 tbsp cooled brewed coffee to the bowl, then whisk for 1 to 2 minutes until the batter is smooth, shiny, and slightly lighter in color.
- Set a fine-mesh sieve over the bowl and sift in 0.75 cup unsweetened cocoa powder, 0.5 cup all-purpose flour, 0.5 tsp fine sea salt, and 0.25 tsp baking powder to remove lumps and distribute the leavening evenly.
- Switch to a flexible spatula and fold the dry ingredients into the wet ingredients for 45 to 60 seconds, stopping as soon as no dry flour streaks remain so the brownies stay tender.
