Quick cooking notes

  • Core ingredients include ground chuck, onion, garlic cloves, celery.
  • Follow all 6 steps in order for the intended texture and doneness.
  • Ingredient quantities listed below are for 8 servings.

Ingredients

  • 450 g ground chuck
  • 1 medium onion (diced)
  • 3 cloves garlic cloves (minced)
  • 3 stalks celery (sliced)
  • 3 medium carrots (peeled and sliced)
  • 2 medium potatoes (peeled and diced)
  • 28 oz diced tomatoes
  • 1 cup green beans (trimmed)
  • 1 cup corn
  • 4 cups water
  • 2 cubes beef bouillon cubes
  • 0.5 cup long-grain white rice (uncooked)
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Instructions

  1. Place a large stockpot over medium-high heat and cook the ground chuck, breaking it up with a spoon, until it is mostly browned.
  2. Add the onion, garlic, celery, and carrots, and cook for 5 to 6 minutes until the onion softens and the vegetables begin to sweat.
  3. Drain off excess fat if needed, then add the potatoes, diced tomatoes, green beans, corn, water, and beef bouillon cubes.
  4. Bring the soup to a boil, then reduce the heat to a steady simmer. Cover loosely and cook for about 1 hour, or until the vegetables are tender.
  5. Stir in the uncooked rice, salt, and black pepper, then continue simmering for 15 to 18 minutes until the rice is cooked through.
  6. Taste and adjust the seasoning if needed, then ladle the soup into bowls and serve hot.
