Tender chopped spinach is folded into a velvety cream sauce with sautéed onion, garlic, and a hint of nutmeg. This steakhouse-style side dish is rich, savory, and ideal for serving alongside roasted chicken, turkey, beef, or a simple weeknight dinner.

Instructions
- Place the thawed 24 oz frozen chopped spinach in a clean kitchen towel set over a medium bowl, then twist firmly for 1-2 minutes to squeeze out as much liquid as possible; the spinach should feel damp but not dripping.
- Warm 1 cup whole milk in a small saucepan over low heat for 3-4 minutes, or microwave it in a microwave-safe measuring cup for about 45 seconds, until warm but not boiling.
- Melt 3 tbsp unsalted butter in a 12-inch skillet or 3-quart sauté pan over medium heat until foamy, about 1 minute.
- Add 0.75 cup finely diced yellow onion to the skillet and cook over medium heat, stirring often with a wooden spoon, for 5-6 minutes until the onion is soft and translucent but not browned.
- Stir in 2 minced garlic cloves and cook over medium heat for 30-45 seconds, until fragrant and just softened.
