French Canadian Lemon Pie

Ingredients

  • 1 cups all-purpose flour (sifted)
  • 0.5 cups unsalted butter (cold and cubed)
  • 0.75 cups granulated sugar
  • 2 tbsp water
  • 0.5 cups fresh lemon juice
  • 1 tbsp lemon zest
  • 3 large egg yolks
  • 2 tbsp cornstarch
  • 3 large egg whites
  • 0.5 tsp cream of tartar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the sifted all-purpose flour and cold cubed unsalted butter, then mix until the mixture resembles coarse crumbs.
  3. Add 2 tablespoons of water and mix until the dough comes together. Press the dough into a pie dish and prick the bottom with a fork.
  4. Bake the crust in the preheated oven for 15 minutes or until lightly golden. Remove from the oven and let cool.
  5. In a saucepan, combine the granulated sugar, fresh lemon juice, lemon zest, egg yolks, and cornstarch over medium heat. Stir until the mixture thickens and begins to bubble.
