  • Ingredient quantities listed below are for 4 servings.

Ingredients

  • 2 tbsp lemon juice
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 tbsp olive oil
  • 2 tbsp fresh tarragon (chopped)

  • 600 g flathead fillets

Instructions

  1. Preheat a large skillet over medium heat and add the olive oil.
  2. Season the flathead fillets with salt and black pepper on both sides.
  3. Once the oil is hot, place the fillets in the skillet and cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.
