  • 2 tbsp fresh dill (chopped)
  • 2 tbsp sugar
  • 1 tsp salt
  • 2 cups dark beer
  • 2 large egg
  • 1 cup water
  • 1 medium onion (chopped)
  • 1 tsp black pepper
  • 2 tbsp butter
  • 200 g rye bread (cubed)

Instructions

  1. In a large pot, melt the butter over medium heat and sauté the chopped onion until translucent.
  2. Add the dark beer and water to the pot, stirring to combine.
  3. Bring the mixture to a gentle simmer, then add the cubed rye bread, sugar, salt, and black pepper.
  4. Cook for about 15 minutes, stirring occasionally, until the bread has softened and the soup has thickened.
  5. In a separate bowl, beat the eggs and slowly add a ladle of the hot soup to temper them, then stir the egg mixture back into the pot.
  6. Remove from heat and stir in the chopped fresh dill before serving.
