  • 900 g chicken thighs (bone-in, skin-on)
  • 120 ml soy sauce
  • 120 ml white vinegar
  • 6 cloves garlic (minced)
  • 3 bay leaves
  • 1 tbsp black peppercorns
  • 240 ml water
  • 1 medium onion (sliced)
  • 2 tbsp olive oil
