Ingredients

  • 500 g ground beef
  • 1 medium onion (chopped)
  • 3 cloves garlic cloves (minced)
  • 10 oz whole wheat elbow macaroni
  • 10 oz frozen chopped spinach (thawed)

  • 1 tsp salt

Instructions

  1. Bring a large pot of salted water to a boil for the pasta.
  2. Meanwhile, place a large skillet or sauté pan over medium-high heat and cook the ground beef with the chopped onion and minced garlic until the beef is browned and the onion is tender.
  3. Season the beef mixture with the salt and black pepper, then drain any excess fat if needed.
  4. Add the macaroni to the boiling water and cook according to the package directions until just tender.
  5. While the pasta cooks, combine the spinach and shredded carrots in a microwave-safe bowl and heat until the spinach is thawed and the carrots have softened slightly.

  7. Add the spinach and carrots to the skillet, stir well, and simmer for another 3 to 4 minutes.
