Quick cooking notes

  • Core ingredients include parmesan cheese, asparagus, salt, olive oil.
  • Follow all 9 steps in order for the intended texture and doneness.
  • Ingredient quantities listed below are for 4 servings.

Ingredients

  • 1 cup parmesan cheese (grated)
  • 1 bunch asparagus (trimmed and cut into 2-inch pieces)
  • 1 tsp salt
  • 3 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 cup wild rice (uncooked)
  • 1 cup cherry tomatoes (halved)
  • 1 tsp black pepper
  • 2 tbsp lemon juice

Instructions

  1. Rinse the wild rice under cold water and combine it with 4 cups of water in a pot.
  2. Bring the water to a boil, then reduce the heat and simmer for about 45 minutes, or until the rice is tender.
  3. While the rice is cooking, bring a pot of salted water to a boil and blanch the asparagus pieces for 2-3 minutes until bright green and tender-crisp.
  4. Drain the asparagus and immediately transfer it to a bowl of ice water to stop the cooking process.
  5. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper to create the dressing.
  6. Once the wild rice is cooked, drain any excess water and let it cool slightly.
  7. In a large bowl, combine the cooked wild rice, blanched asparagus, halved cherry tomatoes, and grated parmesan cheese.
  8. Pour the dressing over the salad and toss gently to combine all ingredients.
  9. Serve the salad warm or at room temperature.
