  • 2 tbsp curry powder
  • 2 cups sweet potatoes (peeled and cubed)
  • 2 cups vegetable broth
  • 1 medium onion (chopped)
  • 2 tbsp olive oil
  • 1 tbsp ginger (grated)
  • 2 cups butternut squash (peeled and cubed)
  • 1 can coconut milk
  • 3 cloves garlic (minced)
  • 1 bunch fresh cilantro (for garnish)
  • 2 medium apples (cored and diced)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger, and sauté until the onion is translucent.
  3. Stir in the curry powder and cook for another minute until fragrant.
  4. Add the sweet potatoes, butternut squash, and diced apples to the pot, stirring to coat with the spices.
  5. Pour in the vegetable broth and coconut milk, and bring the mixture to a boil.
  6. Reduce the heat to low, cover, and let simmer for about 25 minutes, or until the vegetables are tender.
  7. Season with salt and black pepper to taste.
  8. Serve hot, garnished with fresh cilantro.
