- 2 cups vegetable broth
- 1 medium onion (chopped)
- 2 tbsp olive oil
- 1 tbsp ginger (grated)
- 2 cups butternut squash (peeled and cubed)
- 1 can coconut milk
- 3 cloves garlic (minced)
- 1 bunch fresh cilantro (for garnish)
- 2 medium apples (cored and diced)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and grated ginger, and sauté until the onion is translucent.
- Stir in the curry powder and cook for another minute until fragrant.
- Add the sweet potatoes, butternut squash, and diced apples to the pot, stirring to coat with the spices.
- Pour in the vegetable broth and coconut milk, and bring the mixture to a boil.
- Reduce the heat to low, cover, and let simmer for about 25 minutes, or until the vegetables are tender.
- Season with salt and black pepper to taste.
- Serve hot, garnished with fresh cilantro.
