These bright, frosty slushies blend fresh lemon juice, orange juice, and frozen strawberries into a refreshing warm-weather drink. A small amount of sugar balances the citrus, while lemon zest and mint make each glass taste freshly made.

Ingredients

  • 0.75 cup fresh lemon juice (strained)
  • 0.33 cup granulated sugar
  • 1 cup orange juice (chilled)
  • 1 cup cold water
  • 4 cups ice cubes
  • 2 cups frozen strawberries (unsweetened)
  • 1 tsp lemon zest (finely grated)
  • 2 tbsp fresh mint leaves (torn, for garnish)

Instructions

  1. Place six 10- to 12-ounce glasses in the freezer for at least 5 minutes while you prepare the slushies, so the finished drink stays icy and the glasses feel cold to the touch.
  2. Set a high-speed blender on a stable work surface with no heat source needed, and add 0.75 cup strained fresh lemon juice, 1 cup chilled orange juice, 1 cup cold water, 0.33 cup granulated sugar, and 1 tsp finely grated lemon zest to the blender jar.
  3. Secure the blender lid and blend on high speed for 30 to 45 seconds, until the sugar dissolves and the liquid looks smooth with no visible grains at the bottom of the jar.
  4. Add 2 cups unsweetened frozen strawberries to the blender jar, replace the lid, and pulse 6 to 8 times, about 1 second per pulse, until the fruit begins to break down into small icy pieces.
  5. Add 4 cups ice cubes to the blender jar, secure the lid firmly, and blend on high speed for 45 to 60 seconds, stopping once the mixture is thick, spoonable, and evenly pink with no large chunks of ice remaining.
  6. If the blender stalls, turn it off completely, remove the lid, scrape down the sides with a long spatula, add 1 to 2 tbsp additional cold water only if needed, then blend on high speed for another 10 to 15 seconds until the blades move freely.
  7. Check the texture with a spoon; for a thicker slushie, add a few extra ice cubes and blend on high speed for 10 seconds, or for a looser drink, add 1 to 2 tbsp cold water and blend for 5 seconds.
  8. Taste the slushie with a clean spoon, and if the lemons are especially tart, blend in 1 additional tsp granulated sugar for 5 seconds, just until dissolved.
  9. Remove the chilled glasses from the freezer and divide the slushie evenly among them, filling each glass about three-quarters full before the mixture begins to melt.
  10. Garnish each glass with the 2 tbsp torn fresh mint leaves, serve immediately with wide straws or spoons, and discard any melted leftovers that have been left at room temperature for more than 2 hours.
