Instructions
- In a large bowl, combine the buttermilk, cayenne pepper, paprika, garlic powder, onion powder, salt, and black pepper to create a marinade.
- Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours or overnight for best results.
- In a separate bowl, mix the all-purpose flour with additional cayenne pepper, paprika, garlic powder, onion powder, salt, and black pepper.
- Heat the vegetable oil in a deep skillet or fryer over medium-high heat until it reaches 350°F (175°C).
- Remove the chicken from the marinade, allowing excess buttermilk to drip off, then dredge each piece in the seasoned flour mixture, pressing lightly to adhere.
- Carefully place the coated chicken pieces in the hot oil, frying in batches to avoid overcrowding. Fry for about 15-18 minutes, or until golden brown and cooked through, reaching an internal temperature of 165°F (75°C).
- Once cooked, transfer the fried chicken to a wire rack or paper towels to drain excess oil.
- For the gravy, in a saucepan over medium heat, melt the butter and whisk in the flour, cooking for about 2 minutes until lightly browned.
- Gradually whisk in the chicken broth and buttermilk, stirring continuously until the mixture thickens. Season with black pepper to taste.
