Quick cooking notes

  • Core ingredients include sesame seeds, dried onion flakes, granulated sugar, salt.
  • Follow all 10 steps in order for the intended texture and doneness.
  • Ingredient quantities listed below are for 6 servings.

Ingredients

  • 1.01 tbsp sesame seeds
  • 2.03 tbsp dried onion flakes
  • 2.03 tbsp granulated sugar
  • 1.01 tsp salt
  • 1 cups milk (warm)
  • 1.01 tbsp water
  • 2.75 cups all-purpose flour
  • 1 large egg white
  • 1.01 tbsp instant yeast
  • 2.03 tbsp unsalted butter

Instructions

  1. For a bread machine, add the dough ingredients in the order recommended by the manufacturer and run the dough cycle. For the hand-mixed method, continue with the steps below.
  2. Warm the milk with the butter just until the butter melts and the mixture is lukewarm, not hot.
  3. Combine the warm milk mixture, sugar, salt, yeast, flour, and dried onion flakes in a large mixing bowl or the bowl of a stand mixer.
  4. Mix until a shaggy dough forms, then knead for 8 to 10 minutes until the dough is smooth and elastic.
  5. Place the dough in a lightly greased bowl, turn it once to coat, cover, and let it rise until doubled in size, about 1 hour.
  6. Lightly grease a hamburger bun pan or a baking sheet. Turn the dough out onto a lightly greased surface and divide it into 6 equal pieces.
  7. Shape each piece into a smooth ball, place it in the pan or on the baking sheet, and gently flatten the tops.
  8. Cover the shaped buns and let them rise until puffy, about 45 to 60 minutes. Meanwhile, preheat the oven to 375°F.
  9. Whisk the egg white with the water, brush the tops of the buns, and sprinkle them with sesame seeds.
  10. Bake for 15 to 18 minutes, until the buns are golden brown. Remove them from the pan and cool completely on a wire rack.
