Scottish Smoked Salmon and Potato Cakes

Ingredients

  • 500 g potatoes (peeled and diced)
  • 3 stalks green onions (chopped)
  • 100 g sour cream (for serving)
  • 100 g bread crumbs (for coating)
  • 1 tsp black pepper
  • 2 tbsp fresh dill (chopped)
  • 3 tbsp olive oil (for frying)
  • 1 tsp salt
  • 1 large egg (beaten)
  • 200 g smoked salmon (chopped)

Instructions

  1. Boil the diced potatoes in salted water until tender, about 15 minutes, then drain and let cool slightly.
  2. In a large bowl, mash the potatoes until smooth, then mix in the chopped smoked salmon, green onions, beaten egg, dill, salt, and black pepper.
  3. Form the mixture into patties, then coat each patty in bread crumbs.
  4. Heat olive oil in a frying pan over medium heat, then fry the patties for about 3-4 minutes on each side until golden brown.
  5. Serve the smoked salmon and potato cakes warm with a dollop of sour cream on the side.
