Scottish Smoked Salmon and Potato Cakes

These delightful scottish smoked salmon and potato cakes are a perfect blend of flavors and textures. Crispy on the outside and soft on the inside, they make for a delicious appetizer or light meal. Serve them with a dollop of sour cream and fresh herbs for an added touch!

Ingredients
- 500 g potatoes (peeled and diced)
- 3 stalks green onions (chopped)
- 100 g sour cream (for serving)
- 100 g bread crumbs (for coating)
- 1 tsp black pepper
- 2 tbsp fresh dill (chopped)
- 3 tbsp olive oil (for frying)
- 1 tsp salt
- 1 large egg (beaten)
- 200 g smoked salmon (chopped)
Instructions
- Boil the diced potatoes in salted water until tender, about 15 minutes, then drain and let cool slightly.
- In a large bowl, mash the potatoes until smooth, then mix in the chopped smoked salmon, green onions, beaten egg, dill, salt, and black pepper.
- Form the mixture into patties, then coat each patty in bread crumbs.
- Heat olive oil in a frying pan over medium heat, then fry the patties for about 3-4 minutes on each side until golden brown.
- Serve the smoked salmon and potato cakes warm with a dollop of sour cream on the side.
