Risotto Milanese with Saffron

Risotto milanese is a classic italian dish known for its creamy texture and vibrant yellow color from saffron. This comforting dish is rich in flavor and perfect as a main course or a side. Serve it warm, garnished with freshly grated parmesan cheese for an authentic touch!

Ingredients

  • 1 cup arborio rice
  • 4 cups chicken broth (warm)
  • 1 cup dry white wine
  • 0.5 g saffron threads
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 3 tbsp butter
  • 0.5 cup parmesan cheese (grated)
  • 0.5 tsp black pepper (freshly ground)

Instructions

  1. In a small bowl, soak the saffron threads in a few tablespoons of warm chicken broth to release their color and flavor.
  2. In a large saucepan, melt 2 tablespoons of butter over medium heat and add the chopped onion, cooking until translucent.
  3. Stir in the minced garlic and arborio rice, cooking for about 2 minutes until the rice is lightly toasted.
  4. Pour in the white wine and cook until it has mostly evaporated, stirring frequently.
  5. Add the warm chicken broth, one ladle at a time, stirring continuously until the liquid is absorbed before adding more.
