Risotto Milanese with Saffron

Risotto milanese is a classic italian dish known for its creamy texture and vibrant yellow color from saffron. This comforting dish is rich in flavor and perfect as a main course or a side. Serve it warm, garnished with freshly grated parmesan cheese for an authentic touch!
Ingredients
- 1 cup arborio rice
- 4 cups chicken broth (warm)
- 1 cup dry white wine
- 0.5 g saffron threads
- 1 medium onion (finely chopped)
- 2 cloves garlic (minced)
- 3 tbsp butter
- 0.5 cup parmesan cheese (grated)
- 0.5 tsp black pepper (freshly ground)
Instructions
- In a small bowl, soak the saffron threads in a few tablespoons of warm chicken broth to release their color and flavor.
- In a large saucepan, melt 2 tablespoons of butter over medium heat and add the chopped onion, cooking until translucent.
- Stir in the minced garlic and arborio rice, cooking for about 2 minutes until the rice is lightly toasted.
- Pour in the white wine and cook until it has mostly evaporated, stirring frequently.
- Add the warm chicken broth, one ladle at a time, stirring continuously until the liquid is absorbed before adding more.
