  • Ingredient quantities listed below are for 6 servings.

Ingredients

  • 2 tbsp tomato paste
  • 500 ml beef broth
  • 1.5 kg beef chuck (cut into 2-inch cubes)
  • 2 stalks celery (chopped)
  • 750 ml red wine (preferably a full-bodied variety)
  • 4 cloves garlic (minced)
  • 1 tsp black pepper (freshly ground)
  • 2 tbsp olive oil
  • 1 tbsp thyme (fresh or dried)
  • 1 large onion (chopped)
  • 1 tsp salt
  • 3 medium carrots (sliced)
  • 2 bay leaves

Instructions

  1. Heat the olive oil in a large Dutch oven over medium-high heat.
  2. Season the beef cubes with salt and black pepper, then brown them in batches until golden on all sides.
  3. Remove the beef and set it aside, then add the chopped onion, carrots, and celery to the pot, cooking until softened.
  4. Stir in the minced garlic and tomato paste, cooking for an additional minute until fragrant.
  5. Return the beef to the pot and pour in the red wine and beef broth, scraping up any browned bits from the bottom.
