Ingredients

  • 1 tsp paprika
  • 1 tsp salt
  • 1 bay leaf
  • 1 medium carrot (diced)
  • 1 tsp black pepper
  • 2 cups chicken broth
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 medium onion (chopped)
  • 500 g chicken thighs (boneless, skinless)
  • 1 cup peas (frozen)
  • 1 cup long-grain rice (rinsed)

Instructions

  1. Set the pressure cooker to sauté mode and heat the olive oil.
  2. Add the chopped onion and minced garlic, cooking until softened.
  3. Season the chicken thighs with salt, black pepper, and paprika, then add them to the pot, browning on both sides.
  4. Stir in the diced carrot and rinsed rice, ensuring the rice is well mixed with the other ingredients.
  5. Pour in the chicken broth and add the bay leaf, then close the lid of the pressure cooker.
  6. Set the pressure cooker to high pressure for 10 minutes.
  7. Once the cooking time is complete, allow for a natural release for 5 minutes before performing a quick release.
  8. Stir in the frozen peas and let them warm through before serving.
