Ingredients
- 1 tsp paprika
- 1 tsp salt
- 1 bay leaf
- 1 medium carrot (diced)
- 1 tsp black pepper
- 2 cups chicken broth
- 3 cloves garlic (minced)
- 2 tbsp olive oil
- 1 medium onion (chopped)
- 500 g chicken thighs (boneless, skinless)
- 1 cup peas (frozen)
- 1 cup long-grain rice (rinsed)
Instructions
- Set the pressure cooker to sauté mode and heat the olive oil.
- Add the chopped onion and minced garlic, cooking until softened.
- Season the chicken thighs with salt, black pepper, and paprika, then add them to the pot, browning on both sides.
- Stir in the diced carrot and rinsed rice, ensuring the rice is well mixed with the other ingredients.
- Pour in the chicken broth and add the bay leaf, then close the lid of the pressure cooker.
- Set the pressure cooker to high pressure for 10 minutes.
- Once the cooking time is complete, allow for a natural release for 5 minutes before performing a quick release.
- Stir in the frozen peas and let them warm through before serving.
