Indian Style Spiced Potatoes

Ingredients
- 800 g potatoes (peeled and diced)
- 3 tbsp vegetable oil
- 1 tbsp mustard seeds
- 1 tbsp cumin seeds
- 1 tsp turmeric powder
- 1 tbsp coriander powder
- 1 tsp red chili powder
- 1 tbsp salt
- 1 bunch fresh cilantro (chopped)
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the mustard seeds and cumin seeds, and sauté until they begin to pop.
- Stir in the diced potatoes, turmeric powder, coriander powder, red chili powder, and salt.
- Mix well to coat the potatoes with the spices and cook for about 20 minutes, stirring occasionally, until the potatoes are tender.
- Once cooked, remove from heat and garnish with chopped fresh cilantro before serving.
