Fried fruit hand pies are delightful pastries filled with a sweet fruit mixture, encased in a flaky, golden crust. Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter (cold and cubed)
  • 0.5 tsp salt
  • 6 tbsp ice water
  • 2 cups mixed berries (fresh or frozen)
  • 0.5 cup sugar
  • 1 tbsp cornstarch
  • 0.5 tsp cinnamon
  • 2 cups vegetable oil (for frying)
  • 0.25 cup powdered sugar (for dusting)

Instructions

  1. In a large bowl, combine the all-purpose flour and salt, then cut in the cold cubed butter until the mixture resembles coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. In another bowl, mix the mixed berries, sugar, cornstarch, and cinnamon until well combined. Set aside.
  4. Roll out the chilled dough on a floured surface to about 1/8-inch thickness. Cut out circles using a biscuit cutter or a glass.
  5. Place a tablespoon of the berry filling in the center of each dough circle. Fold the dough over to create a half-moon shape and seal the edges by crimping with a fork.
