Fried Fruit Hand Pies

Fried fruit hand pies are delightful pastries filled with a sweet fruit mixture, encased in a flaky, golden crust. Ingredients
- 2 cups all-purpose flour
- 1 cup unsalted butter (cold and cubed)
- 0.5 tsp salt
- 6 tbsp ice water
- 2 cups mixed berries (fresh or frozen)
- 0.5 cup sugar
- 1 tbsp cornstarch
- 0.5 tsp cinnamon
- 2 cups vegetable oil (for frying)
- 0.25 cup powdered sugar (for dusting)
Instructions
- In a large bowl, combine the all-purpose flour and salt, then cut in the cold cubed butter until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- In another bowl, mix the mixed berries, sugar, cornstarch, and cinnamon until well combined. Set aside.
- Roll out the chilled dough on a floured surface to about 1/8-inch thickness. Cut out circles using a biscuit cutter or a glass.
- Place a tablespoon of the berry filling in the center of each dough circle. Fold the dough over to create a half-moon shape and seal the edges by crimping with a fork.
