This chilled strawberry milk blends ripe berries with cold milk, a little greek yogurt, honey, and vanilla for a creamy, naturally fruity drink. Straining is optional, but it gives the milk a smooth café-style finish.

Ingredients

  • 1 tsp vanilla extract
  • 0.5 cup plain greek yogurt (cold)
  • 2 tbsp honey
  • 2 cups fresh strawberries (hulled and sliced)
  • 0.125 tsp fine sea salt
  • 3 cups 2% milk (cold)

Instructions

  1. Place a cutting board, paring knife, measuring cups, and a blender on the counter; because this is a no-cook drink, no pan or heat is needed.
  2. Rinse 2 cups hulled and sliced fresh strawberries under cool running water in a colander for about 30 seconds, then pat them dry with a clean kitchen towel so the milk does not become watery.
  3. Add the 2 cups hulled and sliced fresh strawberries to the blender jar, making sure the pieces sit below the maximum fill line for safe blending.
  4. Pour 3 cups cold 2% milk into the blender, then add 0.5 cup cold plain Greek yogurt, 2 tbsp honey, 1 tsp vanilla extract, and 0.125 tsp fine sea salt.
  5. Secure the blender lid firmly and blend on low speed for 10 seconds to break up the strawberries without splashing.
  6. Increase the blender to high speed and blend for 45 to 60 seconds, until the mixture is evenly pink, creamy, and no large strawberry pieces are visible.
  7. For a smoother texture, set a fine-mesh strainer over a 1-quart pitcher and pour the strawberry milk through it, pressing gently with a silicone spatula for about 1 minute until only seeds and pulp remain in the strainer.
  8. Taste the strawberry milk with a clean spoon and, if the berries are tart, blend in up to 1 additional teaspoon of honey for 5 seconds; the drink should taste lightly sweet, fresh, and balanced.
  9. Pour the strawberry milk into four chilled 10- to 12-ounce glasses and serve immediately, or cover the pitcher and refrigerate for up to 24 hours, stirring for 10 seconds before serving if it separates.
