Fiery Avocado Green Curry with Shrimp

This vibrant and spicy avocado green curry features succulent shrimp and a medley of fresh vegetables. The creamy avocado adds richness while the green curry paste brings a delightful heat. Serve it over rice or noodles for a satisfying meal!
Ingredients
- 500 g shrimp (peeled and deveined)
- 2 medium avocado (mashed)
- 3 tbsp green curry paste
- 400 ml coconut milk
- 1 medium bell pepper (sliced)
- 1 medium zucchini (sliced)
- 150 g spinach (fresh)
- 2 tbsp lime juice
- 1 tbsp fish sauce
- 1 tbsp olive oil
- 1 tbsp fresh cilantro (chopped)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the green curry paste and sauté for 1-2 minutes until fragrant.
- Stir in the coconut milk and bring to a simmer.
- Add the shrimp and cook for about 5 minutes until they turn pink.
- Incorporate the sliced bell pepper and zucchini, cooking for an additional 5 minutes.
