Fiery Avocado Green Curry with Shrimp

This vibrant and spicy avocado green curry features succulent shrimp and a medley of fresh vegetables. The creamy avocado adds richness while the green curry paste brings a delightful heat. Serve it over rice or noodles for a satisfying meal!

Ingredients

  • 500 g shrimp (peeled and deveined)
  • 2 medium avocado (mashed)
  • 3 tbsp green curry paste
  • 400 ml coconut milk
  • 1 medium bell pepper (sliced)
  • 1 medium zucchini (sliced)
  • 150 g spinach (fresh)
  • 2 tbsp lime juice
  • 1 tbsp fish sauce
  • 1 tbsp olive oil
  • 1 tbsp fresh cilantro (chopped)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the green curry paste and sauté for 1-2 minutes until fragrant.
  3. Stir in the coconut milk and bring to a simmer.
  4. Add the shrimp and cook for about 5 minutes until they turn pink.
  5. Incorporate the sliced bell pepper and zucchini, cooking for an additional 5 minutes.
