Ingredients

  • 1 medium tomato (chopped)
  • 1 tsp cumin seeds
  • 1 cups basmati rice (rinsed)
  • 4 cups water
  • 3 cloves garlic (minced)
  • 0.25 cups cilantro (chopped)
  • 1 tsp salt
  • 1 tsp coriander powder
  • 2 tbsp vegetable oil
  • 1 medium onion (chopped)
  • 1 cups red lentils (rinsed)
  • 1 tbsp ginger (grated)
  • 1 tsp turmeric powder

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, grated ginger, and cumin seeds, cooking for another minute until fragrant.
  4. Add the chopped tomato, turmeric powder, coriander powder, and salt, cooking until the tomato softens.
  5. Add the rinsed red lentils and water, bringing the mixture to a boil.
  6. Reduce the heat and simmer for about 20 minutes, or until the lentils are tender.
  7. Meanwhile, cook the basmati rice according to package instructions.
  8. Once the lentils are cooked, stir in the chopped cilantro and adjust seasoning if necessary.
  9. Serve the daal over the basmati rice and enjoy!
