Daal with Basmati Rice

Ingredients
- 1 medium tomato (chopped)
- 1 tsp cumin seeds
- 1 cups basmati rice (rinsed)
- 4 cups water
- 3 cloves garlic (minced)
- 0.25 cups cilantro (chopped)
- 1 tsp salt
- 1 tsp coriander powder
- 2 tbsp vegetable oil
- 1 medium onion (chopped)
- 1 cups red lentils (rinsed)
- 1 tbsp ginger (grated)
- 1 tsp turmeric powder
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, grated ginger, and cumin seeds, cooking for another minute until fragrant.
- Add the chopped tomato, turmeric powder, coriander powder, and salt, cooking until the tomato softens.
- Add the rinsed red lentils and water, bringing the mixture to a boil.
- Reduce the heat and simmer for about 20 minutes, or until the lentils are tender.
- Meanwhile, cook the basmati rice according to package instructions.
- Once the lentils are cooked, stir in the chopped cilantro and adjust seasoning if necessary.
- Serve the daal over the basmati rice and enjoy!
