  • 2 tbsp olive oil
  • 2 tbsp paprika
  • 1 cup all-purpose flour
  • 1 cup buttermilk
  • 1 tbsp onion powder
  • 1 tbsp black pepper
  • 800 g chicken thighs (skin-on, bone-in)
  • 1 tbsp garlic powder

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and black pepper.
  3. Add the chicken thighs to the buttermilk mixture, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
  4. In a separate shallow dish, place the flour and season with additional salt and pepper if desired.
  5. Remove the chicken from the buttermilk mixture, allowing excess to drip off, and dredge each piece in the flour, pressing lightly to adhere.
  6. Arrange the coated chicken on the prepared baking sheet and drizzle with olive oil.
  7. Bake in the preheated oven for 35-40 minutes, or until the chicken is golden brown and cooked through, reaching an internal temperature of 165°F (74°C).
  8. Let the chicken rest for a few minutes before serving.
