Creamy Winter Potato Soup

Ingredients
- 30 g fresh parsley (chopped)
- 0.5 tsp black pepper
- 1 tsp salt
- 100 g carrots (chopped)
- 1 liters vegetable broth
- 200 ml heavy cream
- 2 tbsp olive oil
- 150 g onion (chopped)
- 900 g potatoes (peeled and diced)
- 100 g celery (chopped)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion, carrots, and celery, and sauté until the vegetables are softened, about 5 minutes.
- Stir in the diced potatoes and cook for another 5 minutes.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce the heat and let it simmer until the potatoes are tender, about 20 minutes.
- Once the potatoes are cooked, use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream and season with salt and black pepper.
- Garnish with fresh parsley before serving.
