Ingredients

  • 30 g fresh parsley (chopped)
  • 0.5 tsp black pepper
  • 1 tsp salt
  • 100 g carrots (chopped)
  • 1 liters vegetable broth
  • 200 ml heavy cream
  • 2 tbsp olive oil
  • 150 g onion (chopped)
  • 900 g potatoes (peeled and diced)
  • 100 g celery (chopped)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, carrots, and celery, and sauté until the vegetables are softened, about 5 minutes.
  3. Stir in the diced potatoes and cook for another 5 minutes.
  4. Pour in the vegetable broth and bring the mixture to a boil.
  5. Reduce the heat and let it simmer until the potatoes are tender, about 20 minutes.
  6. Once the potatoes are cooked, use an immersion blender to puree the soup until smooth.
  7. Stir in the heavy cream and season with salt and black pepper.
  8. Garnish with fresh parsley before serving.
