Quick cooking notes

  • Core ingredients include yellow onions, beef broth, thyme, french baguette.
  • Follow all 10 steps in order for the intended texture and doneness.
  • Ingredient quantities listed below are for 4 servings.

Ingredients

  • 4 cups yellow onions (thinly sliced)
  • 6 cups beef broth (low sodium)
  • 1 tbsp thyme (fresh, chopped)
  • 4 slices french baguette (toasted)
  • 4 tbsp butter (unsalted)
  • 2 cloves garlic (minced)
  • 1 cup gruyère cheese (shredded)
  • 1 tsp salt
  • 1 cup dry white wine (optional)
  • 1 leaf bay leaf (whole)
  • 1 tsp black pepper (freshly ground)

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 30 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Pour in the dry white wine, if using, and scrape the bottom of the pot to deglaze, cooking until the wine is mostly evaporated.
  5. Add the beef broth, thyme, bay leaf, salt, and black pepper to the pot, and bring to a simmer.
  6. Reduce the heat and let the soup simmer for 15 minutes to allow the flavors to meld.
  7. Remove the bay leaf and adjust seasoning if necessary.
  8. Ladle the soup into oven-safe bowls, top each with a slice of toasted baguette, and sprinkle with shredded Gruyère cheese.
  9. Place the bowls under the broiler until the cheese is melted and bubbly, about 3-5 minutes.
  10. Serve hot and enjoy your Classic French Onion Soup.
