Quick cooking notes

  • Core ingredients include boneless skinless chicken breast halves, all-purpose flour, oil, onion.
  • Follow all 7 steps in order for the intended texture and doneness.
  • Ingredient quantities listed below are for 6 servings.

Ingredients

  • 1.5 lb boneless skinless chicken breast halves (cut into bite-size pieces)
  • 2 tbsp all-purpose flour
  • 1 tbsp oil
  • 1 medium onion (chopped)
  • 2 cloves garlic cloves (minced)
  • 0.5 tsp ground ginger
  • 2 cups apple cider (or unsweetened apple juice)
  • 14.5 oz low-sodium diced tomatoes (drained)
  • 2 large sweet potatoes (peeled and cut into 1-inch cubes)
  • 12 oz green beans (trimmed and cut into 1 to 2-inch pieces)
  • 0.25 cup fresh basil (chopped)

Instructions

  1. Heat the oil in a large saucepan or soup pot over medium heat.
  2. Toss the chicken pieces with the flour until lightly coated, then add them to the hot oil and cook for about 3 minutes, just until lightly browned on the outside.
  3. Remove the chicken from the pot and set it aside.
  4. Add the onion, garlic, and ground ginger to the same pot and cook for 2 minutes, stirring often, until the onion begins to soften. Add a small splash of apple cider if the pot looks dry.
  5. Stir in the remaining apple cider, diced tomatoes, sweet potatoes, green beans, basil, and the browned chicken.
  6. Bring the stew to a boil, then reduce the heat to low and simmer for 30 to 35 minutes, stirring occasionally, until the chicken is cooked through and the sweet potatoes are tender.
  7. Serve hot.
